Christmas Light Brownies for Santa

These quick and easy colourful brownies will light up any festive occasion and are just perfect to leave as a sweet treat for Santa on Christmas Eve!
All You Need Is ...
Vegetable oil for greasing
- 1 box Betty Crocker™ Triple Chocolate Brownie Mix
- 2 extra large eggs
- 125g melted butter or 1/2 cup vegetable oil plus 1 tablespoon water
For the decoration
- 250g Betty Crocker™ Creamy Deluxe™ Vanilla Flavoured Frosting
- 30g Betty Crocker™ Creamy Deluxe™ Chocolate Frosting
- 45g brightly coloured sugar-coated chocolate beans (see Tips)
Betty's Easy Steps
- Preheat the oven to 180°C (160°C fan forced). Grease a 23cm square shallow cake pan and line the base and sides with baking paper.
- Make up the brownie mix as directed on the box with the eggs, melted butter or oil and water. Spread the mixture evenly in the prepared pan.
- Bake for 25-30 minutes or until a round bladed knife inserted 5cm from the edge of the pan comes out clean. Leave in the pan for 15 minutes, then lift out of the pan using the lining paper and transfer to a cooling rack to cool completely (about 45 minutes).
- Remove the lining paper from the brownie slab and place upside down on a board (see Tips). Use a small palette knife to spread the vanilla frosting evenly over the top.
- Spoon the chocolate frosting into a small paper or disposable piping bag fitted with a fine writing tip or nozzle (or just snip off the tip of the piping bag to create a small hole). Pipe a continuous swirly line to resemble fairy lights wire. Add the sugar-coated chocolate beans at intervals along the ‘wire’ to resemble fairy lights. Cut into 16 squares.
Betty's Tips
- Flipping the cold brownie slab over to decorate will ensure that you have a smooth, crumb-free surface for frosting.
- You can use any small colourful sweets for the fairy lights, such as mini jelly beans.
- Store the brownies in an airtight container in a cool place for 3-4 days.
